The only (and newly discovered) way I like to drink Guinness- chugged into @nigellalawson’s Chocolate Guinness cake. The sponge, plumptiously weighty and dark as glistening coal, simultaneously fluffy and densely moist. Frothy pint inspired topping of whipped sour and double cream, unintentionally cut back on a good gush of sugar (store cupboard shortage) and worked a creamily tart treat. The Guinness lends roundedly earthy notes, almost fruitiness, cheekily concealing the amount of sugar in its cakey belly. Would have liked more of an emphatic chocolatey punch but suspect it’s my long-opened cocoa powder to blame, vowed to only ever treat myself to the really good stuff. Many slices of this whopper sent off to worthy homes, making room for the hot cross buns about to come out of the oven
