Baked this dark, decadent and utterly divine cake this weekend. It was my first time baking with Guinness and I love how sumptuous the centre is, the Guinness gives it such a deep and rich flavour. The topping is wonderfully sweet and creamy, and really makes for a beautiful flavour combination. I managed to rectify what would have been a complete baking disaster; misread 2.5 teaspoons of bicarbonate of soda for 2.5 tablespoons!!! Luckily I realised or it would have turned out somewhat different! So for that reason I shall call the cake ‘Guinness mountain, a lucky Escape!’
