Nigella's classic Victoria Sponge recipe with a fascinator of strawberries and cream. A whole jar of seedless raspberry jam gave it a nice tartness. It was made in an 8" springform pan and then sliced when cool. I gave it 40 minutes in the oven (5 too many!) and it was a teeny bit dry, but nothing a few extra strawberries couldn't cure, ha ha.
