I halved the ingredients to make a delicious mini version for 1-2 people. Baked for 20 mins. Used boysenberry jam and butter cream filling. Decorated with flowers from the garden and dusted with icing sugar. Love this recipe, it’s quick, easy and the cake is light, fluffy & delicious. I will definitely make it again. My tip is don’t put put too much cream and jam between the layers and wait for it to cool before assembling it.
