A delectable inspired Victorian Sponge segmented by a homemade amply sweet & tart cherry jam layered with whipped cream. Rather than using the raspberry jam, I figured a more tart cherry jam would accentuate the flavour profile of the sponge by adding a nice contrast between the sweetness from it through the golden caster sugar used, and the creaminess from the whipped cream.
