Because of the sunny weather so far I decided to mix it up and do a tropical take on the tart, I had pineapple conserve which I mixed in with the soft cheese, it’s tangy and surprisingly not overpowering at all. To add I put some mango pieces on top to compliment the berries and finished it off with a few mint leaves for garnish! The process was fun and not stressful at all, the only thing that was lacking was my patience waiting for it to set! My family enjoyed it greatly and I would most definitely make it again, trying new combinations in the future :)
