I couldn’t resist moving the cake into my living room on a beautiful sunny Sunday morning to take this photo. The pistachios (bashed haphazardly in a pestle and mortar) look an almost unreal vivid colour, especially contrasted against the dark rich brown of the cake and icing. I’m not a regular baker but found making this cake very simple, even if I did have to test its readiness with an uncooked spaghetti strand in absence of a cake tester! It turned out perfectly - squidgy, rich and delicious. The coconut butter in the icing gives a lovely burst of flavour. I can’t wait to make this for my mum, who is a huge fan of dark chocolate bounty bars! My first time entering the cook along and I had lots of fun - thanks Nigella team :)
