Victoria Sponge with mascarpone cream filling I used fresh cream and mascarpone instead of clotted cream. I used about 2/3 cup heavy cream and 200 grams of mascarpone. I sweetened with powdered sugar and whipped ingredients with stand up mixer. I used seedless raspberry jam and stayed true to given sponge cake recipe. Oh and I forgot to buy the suggested fresh raspberries. I wanted to garnish with some pansies but found that they were infested with mites. The lone strawberry had to make it pretty.
