Using Nigella’s recipe I decided not to deviate from her original recipe. I thoroughly enjoyed the making and baking process in preparation for King Charles’ Coronation! The fresh raspberries added to the raspberry jam gave a beautiful tart hint to the sweetness of the jam. I also added some crushed raspberries to the cream and the speckled effect looked beautiful. From the creaming of the butter to the swirling of the cream the whole process was a sponge to remember.
