Our elderflower tree was in blossom so we were inspired to twist the recipe by using elderflower cordial instead of rosewater. We also made mango and passionfruit coulis and kept in the seeds as my youngest daughter loves them. The strawberries and elderflower had a sharpness too which was brough out by the pepper and a few drops of vinegar.
