This was supposed to be a birthday treat, but due to the sudden passing of my mother, who loved a citrus cake, I have dedicated my version to her. I've added a mix of orange, lemon & lime zest to top the cake to give added zing. Beautifully scented and deceptively light, this is the perfect afternoon cake and a wonderful tribute to mum.
