We had a very eventful Christmas day with 30 guests at our home and quite an elaborate menu planned well in advance. So we left it until late December to make this Yule Log, at a time when my niece and I could plan our creation, relax and enjoy the process. My niece loves nature and is patiently meticulous with all things creative. We created a bark effect using flaked chocolate, and, intent on attaching a fungi to the log, my niece settled on hazelnut slivers after trialling three other nuts. This was perfect as we had already enriched the icing with the addition of a hazelnut spread and whipped cream to provide a rich ganache finish. We look forward to enjoying this Yule Log on New Years Eve. Happy New Year to Nigella, her team and all December entrants!
