JANUARY BLUES! I made this with my Great Neice Ruby for her Duke of Edinburgh Award and we shared the beautiful cake with her Mum and Brother for late Afternoon Tea. Absolutely loved the texture of this Golden Lemon with Coconut cake served with intense flavours of Blueberry Compote. It definitely chased the January Blues away ...so lovely.
