Victoria sponge. Two layers of airy butter cake, sandwiched with sweet strawberry jam, billowy smooth whipped cream and slightly sweetened crushed strawberries; the whole royal affair is topped with, you guessed it, more ruby-red peak season strawberries and a dusting of confectioners’s sugar. Recipe by Nigella Lawson. The cake was a huge hit at a garden party I took it to on the weekend. I replaced the raspberries called for in the recipe with local strawberries, which are at their very best at this time of the year in my neck of the woods.
