I think Queen Victoria would have loved this afternoon tea served in our sunny lakeside garden. I made a Victoria Sponge traybake, topped with a dusting of icing sugar and fresh strawberries and portioned into individual sandwiches which was a very convenient way for guests to help themselves. This was my first time making a Victoria Sponge and I will certainly be making it again soon. The light, airy and buttery sponge, scented with vanilla and filled with a delicious whipped double cream with crushed fresh raspberries was perfect with a hot cup of tea.
