Hello new summer favourite dessert, made with lemon curd stirred through cream cheese and a couple of tablespoons of whipped double cream. Topped with the best strawberries and a quick strawberry 'jam' made in 10 minutes with the less best fruits, granulated sugar and lemon juice. My family aren't keen on blueberries or other soft fruits so I didn't add them. I mixed plain digestives with chocolate digestives and added a generous spoonful of brown sugar before stirring in the butter to make the base which pleased all ages.
