It's not often I'm lost for words, but a mixture of envy, admiration, and rapt greed almost silences me on the subject of Diana Henry's latest book. For me — as for so many of us — a chicken is the elemental unit of home cooking, and this book — dedicated to the subject — is one that no home cook could want to be without. Frankly, there's not a recipe I couldn't have chosen for you, but I plumped for the one below, as I happen to be in possession of some particularly fine home made marmalade at the moment, and thought you might be, too. But, seriously, you do not want to be limiting yourself to just one recipe: you need all of them. I am now locking my copy away until I've finished my own book, as both a security measure and incentive to get my book finished!
