I am such an admirer of Nadiya Hussain’s: she has poise, grace, wit, courage and an exuberant feeling for flavour, and for what matters both in and out of the kitchen. It is impossible not be charmed by her or by her food. As I read her new book, I found myself smiling on every page. She combines ingredients and influences with brio and a relaxed and inviting touch. I can’t wait to try out her Cheat’s Paratha (using bought puff pastry) or her Bombay Potato Tacos (double carbs: double joy) and, on the sweet side, her notion of a giant eclair roll is just brilliant. As is the recipe I’ve chosen for you now, her Back-to-Front Cheesecake. The cheesecake itself is baked without a base, and then, when cooled and unmoulded, it’s covered with honey salted caramel and a crumble made with crushed digestive biscuits, chocolate and nuts. Sheer genius.
