The Palomar, in Soho, is that rare thing — a restaurant that is not only both hip and cosily welcoming, but also one that serves food that makes any normal person need 1) to over-order and 2) come back very soon. I have spent many a happy moment eating their Kubaneh Bread, buttery and fluffy and made for greedy dippage, and many more thinking about it. Perhaps I should have chosen the recipe for it here, but it’s best followed alongside the step-by-step instructions in the book (it’s fiddly rather than difficult to make, though). As with any restaurant cookbook, some recipes are more readily accessible than others, but all are inspiring, and I’ve chosen one here that is both simple and seasonal — and very, very good.
