CookbookCorner returns to nigella.com next week, but I’m taking over its usual space now to tell you that I’ve added some recipes to the site. And while they’ll certainly be featured as Recipe of the Day in the coming weeks, patience is not one of my virtues. And why should you have to wait for them, anyway? If now isn’t the time for recipes that offer comfort with gorgeous ease, I don’t know when is, frankly.
I’ve published all of them previously — though not in my books or on here — and cook all of them regularly. First up, a speedy store-cupboard supper for two in the form of my Sardine Spaghetti. This is not a take on the fresh and fragrant Pasta con le Sarde of Sicily, but makes glorious use of tinned sardines, which I always have on standby, just as I do spaghetti. My second recipe for you is also pasta-based and made with ingredients that I keep in my fridge and kitchen cupboards: it’s Go-To Gochu One-Pan Pasta and my first port of call when I want a last-minute solo supper. The Gochu of the title refers to that fabulous Korean chilli pepper paste, Gochujang which I know might not exactly seem like a regular storecupboard item, but I urge you to rethink that, as it’s an invaluable ingredient, adding instant depth, spice and flavour to any number of dishes near-instantly.
And now for the sweet side of things: from my long-ago app, I have Coffee Shortbreads that are both crisp and melting and which, perversely, I like to accompany a mug of tea rather than coffee; and then there’s that soul-salving, fruit-speckled tea-bread from Wales, Bara Brith, to be eaten sliced and thickly spread with butter mid-morning or during dark afternoons or, indeed, any time you want a sweetly consoling pick-me-up!
