The white chocolate provides a buttery vanilla counternote to that essential cream-cheese tang, offset by the ginger biscuits in the base. It’s light, balanced, beautiful - and gratifyingly easy to make. It’s a no-bake, just set-in-the-fridge number, and I just can’t stop making it.
