Make it. Trust me; you won't be disappointed. It's as good as any carrot cake I've ever tasted, and better than many. I added the zest of a lime and 60g crushed pistachios to the cake batter and it was fantastic. Also fantastic without the changes. Not sure if we're allowed to mention brands here, but the company that make Little Scarlet jam make excellent curds. I used their lime curd for this cake.
