Heat oven to 350 degrees. Cream butter and cream cheese; beat until light and fluffy. Add flour, a quarter cup at a time, mixing well. Roll out dough on a lightly floured surface to 1/8 inch thickness. Cut into rounds with a 2-inch cookie cutter. Place on a parchment-lined baking sheets. Spoon 1/4 teaspoon jam on each cookie fold in opposite sides, slightly overlapping edges. Bake for 15 minutes. Remove from cookie sheets to cooling racks, and sprinkle with powdered sugar.
Introduction
Though kolaches are pastries made with a yeast dough, these jam-tart cookies use a short-crust pastry and are a cinch to make. Honest! Not too sweet, the cookies get their sugar from the jam and the light dusting of confectioner's sugar. Excellent with a cup of black tea, on a snowy afternoon, or anytime at all.
