Jam Kolaches

Introduction

Though kolaches are pastries made with a yeast dough, these jam-tart cookies use a short-crust pastry and are a cinch to make. Honest! Not too sweet, the cookies get their sugar from the jam and the light dusting of confectioner's sugar. Excellent with a cup of black tea, on a snowy afternoon, or anytime at all.

Ingredients

Serves: 6

  • ½ cup softened unsalted butter
  • 13 ounces softened cream cheese
  • 1¼ cups all-purpose flour
  • ¼ cup strawberry jam
  • ¼ cup sifted confectioners' sugar

Method

  • Heat oven to 350 degrees.
  • Cream butter and cream cheese; beat until light and fluffy.
  • Add flour, a quarter cup at a time, mixing well.
  • Roll out dough on a lightly floured surface to 1/8 inch thickness. Cut into rounds with a 2-inch cookie cutter. Place on a parchment-lined baking sheets.
  • Spoon 1/4 teaspoon jam on each cookie fold in opposite sides, slightly overlapping edges.
  • Bake for 15 minutes. Remove from cookie sheets to cooling racks, and sprinkle with powdered sugar.
