Spumante Chicken

Grab a large baking dish , pour the whole bottle of spumante in, add the 2 pkts of soup mix. Stir and combine well, then add the chopped capsicums and shallots or onions Mix around, place the chicken fillets into the liquid, spaced out, cover with foil and cook in a 180 degree oven for about 45 mins. When you check it, the liquid should be thicker, turn the chicken over and put back in the oven for about 15 to 20 mins. If the sauce is not thick enough , add a wee bit of corn flour and mix in , or just pour into a pan and reduce a bit over the heat. Serve with some steamed veges...my choice would be green beans, julienne carrots and maybe some corn ...all adds to the colour of the dish .......yummo

Serves: 6 - 8
- 8 chicken breasts (fillets)
- 1 bottle sparkling wine (any kind)
- 1 large red pepper (diced)
- 1 large green pepper (diced)
- 5 shallots (chopped - or 2 medium onions, diced)
- 2 packets chicken noodle soup (large packets that serve 4-6 people)
