Put each steak between 2 sheets of baking paper and using a mallet, hit until steak is very thin. Cut steaks into two. Spread some crushed garlic onto the each steak and sprinkle with pepper. Top with onion, mushrooms & cheese. Roll the steaks and secure with toothpicks. Place rolled steaks into a baking dish and top with remaining onion, mushrooms and cheese. Bake in a 180 degree oven for 30 minutes. Turn over and bake for another 15-20 minutes or until cooked through. Remove from the oven. Remove the steaks from the baking dish and cover with foil.
Put the baking dish on the stove top and add 2-3 tbsp of chicken gravox and stir with a fork. Add a good splash of port and water until desired consistency is achieved. Pour gravy over the rolled steak and serve with hot vegetables. Tip: Delicious with crispy potatoes
