Miso Caramel Sauce

Introduction

Salted caramel is so in right now. This recipe takes it to the next level, adding the deep umami flavour of miso paste to salted caramel's traditional sweet-salty zing. Rich and creamy, this caramel sauce is perfect with dessert, to add a sweet glaze to roasted meat or spooned from the jar all on its own.

Ingredients

Yield: 1 cup

  • 3 cups granulated sugar
  • 1 cup water
  • 1 cup cream
  • 2 tablespoons miso paste

Method

  • Combine the sugar and water in a heavy-based saucepan over a medium heat. Then without stirring - as this will cause the mixture to crystallise - bring the mixture to the boil. When the mixture is a dark golden brown, remove the mixture from the heat.
  • Carefully pour in the cream, being careful as this will cause the caramel to bubble. Stir to combine.
  • Stir or whisk in the miso paste until it is completely combined. Leave to cool slightly.
  • Once the caramel is cooled, pour into a lidded container and store in the refrigerator.
