Scrummy, Idiot Proof Breakfast

Introduction

A nice alternative to a fry up, also makes a nice lunch and is almost impossible to get wrong!

Ingredients

Serves: 2

  • 1 medium potato (or 2 small)
  • 4 rashers bacon
  • 2 sausages
  • 2 eggs
  • 4 mushrooms
  • cheese (grated)
  • chilli (optional)

Method

  • Pre heat oven to 180 degrees
  • Peel and boil potatoes until almost cooked, remove from heat and allow to cool. Once they are cool cut them into small cubes and divide them into two small round oven proof dishes or tureens.
  • Place in oven until they are part cooked, remove and add bacon, sausage and mushrooms. Put back in the oven and cook for a further 10-15mins, remove again and make a small hole in the middle and crack the egg into here.
  • Once the egg is cooked remove from the oven and sprinkle with cheese (chilli is added here if wanted) and place under the grill until cheese is melted.
  • Anything you usually have with breakfast can be added that you fancy (beans/black pudding), all you have to do is work out how long it would take to cook in the oven!
