Jamaican Planters' Cheese Cake

Lightly fry chopped onion, scallion and chile with butter. Do not fry until golden. Beats eggs and combine all the ingredients in one bowl. Grease a oven proof dish and pour mixture into same and bake (at well the recipe says 350 c whatever that is) for about 20 mins or less. Do not overbake. It also says it is essential the mixture comes almost to the top of the dish. I just love my aunt's bossy instructions in the book.
Introduction
I found this recipe in a very old handwritten cookbook from Jamaica, left to me by great aunt. I was very scared to try this but its just superdoopa. Its a bit trial and error to get the oven right for your own oven. But this was made for an aga. Just keep checking after about 15 mins.

- 2 teaspoons butter
- ½ cup grated Cheddar cheese
- 1 cup milk
- 3 eggs
- chile (a small bit finely chopped)
- ½ small finely chopped onion
- 1 finely chopped scallion
- salt (to taste)
- pepper (to taste)
