Chicken With Basil Cream Sauce

Combine flour, pepper and salt in a bowl and coat the chicken, shaking off excess. Heat oil and butter in a pan, add the chicken and cook over medium heat for 5-6mins each side. Remove from the pan and keep warm. Basil Cream Sauce: Wipe out the pan, heat the butter, add the garlic and cook for 2mins. Add chicken stock, cream and lemon juice, bring to the boil and reduce a little. Just before serving, add the basil, season with pepper and salt and serve the sauce drizzled over the chicken.
