Cherry and Almond Loaf

Cream butter and sugar till light and fluffy, then beat in eggs, one at a time. Fold in flour, almonds and cherries (halved or quartered, as you prefer). Stir in a little milk if mixture seems dry. Bake in a loaf tin for 75 - 90 minutes at Gas 2 / 150ºC
Introduction
This is simple, but just a little bit more special than an "everyday-style" cherry cake: because of the almonds, it usually turns out nice and moist and keeps quite well.

- 5 ounces butter
- 6 ounces superfine sugar
- 6 ounces self-rising flour
- 2 ounces almond meal
- 4 ounces candied cherries
- 2 eggs
- milk (a little)

Additional Information
Rinse and flour the cherries if you like, though I have never found any foolproof method of getting them evenly distributed. If in spite of your efforts they sink, as cherries sometimes do, it still tastes good !
