Vanilla Fudge

Put the butter and milk in a deep pan and simmer until butter is melted and milk starts to boil. Turn the heat down and add sugar. Stir occasionally until sugar has dissolved and turn the heat back up slightly until it reaches a rolling boil. Once it is at a rolling boil stir continuously until the fudge reaches soft ball stage on a sugar thermometer (usually about 20mins) if you dont have a thermometer, test the fudge by putting a drop into ice cold water, if it forms a ball when rolled between your fingers, its ready. Remove from the heat a quickly beat in the melted marshmallows, chocolate and vanilla until all melted and combined. Pour onto lined baking tray and leave to cool. Once cool, place in fridge for approx four hours to set, I usually leave it overnight just to be sure.
Introduction
I make batches and batches of this fudge for friends and family at Christmas, its time consuming but worth it!

- 15 ounces butter
- 15 ounces milk
- 27 ounces granulated sugar
- 6 milk chocolate (cubes of)
- 6 melted marshmallows
- 2 teaspoons vanilla essence

Additional Information
It is not essential to put the chocolate in because it does not add flavour but it is there to help set it. The marshmallows are essential as they do help it set and it has never worked when I have left them out.
