Apple and Cinnamon Sponge

Introduction

This apple and cinnamon sponge is easy to make and tastes wonderful.

Ingredients

Serves: Would serve 6-8 average slices

For the Cake

  • 4 ounces softened butter
  • 6 ounces self-rising flour
  • 6 ounces superfine sugar
  • 2 large eggs
  • 4 tablespoons milk

For the Apple Layer

  • 4 apples
  • 1 teaspoon cinnamon
  • 1 brown sugar

Method

  • For the cake:
  • Cream the sugar and butter together with a wooden spoon. Add one egg then mix Sift half flour then mix Add the other egg then the rest of the flour. Add in the milk. Pour mixture into a baking tin.
  • For the Apple layer:
  • Stew the four apples and 2 tablespoons of brown sugar by putting them into about 2 mugs of boiling water on a high heat. When they are soft, layer the apples on top of the cake mixture and sprinkle about a teaspoon of brown sugar and a teaspoon of cinnamon on top of the apples. Place in a pre-heated oven and cook 180 degrees C/gas mark 4 for 30-40 mins.
