Line a 22cm(9 in) springform pan with baking paper, and heat oven to 200C Beat Together until pale and fluff: eggs, vanilla, superfine sugar Sift three times and fold in flour and salt Bring to boil and add immediately: milk and butter. Put the mixture into the prepared pan immediately and hurry it into the oven. Bake for 20 to 30 minutes and while it is cooking Mix together sugar, coconut and cream When the cakes is cooked remove it from the oven, leave in the tin, and spread the coconut topping over the top. Put it under a hot griller for a few minutes, until it turns golden brown. Leave in the pan for at least five minutes before removing the pan's side. Says it keeps well, but it never gets the chance!
