Run together the marg and flour, add the sugar, apples, golden raisins, lemon juice, rind and eggs. Put into a 7 inch cake tin, greased and lined and bake for 1 and a half hours on gas mark 4. Tastes best if you let it stand in a storage tin for a day after making. Nice on its own or with custard
Introduction
I found this when i was going though a box of my mums things. She used to make this for us all the time when I was younger, and it's a really nice moist cake. I'm hopeless at changing ounces to grams, so I've used ounces as mum had it written.

- 12 ounces self-rising flour
- 6 ounces margarine
- 6 ounces superfine sugar
- 6 ounces golden raisins
- 12 ounces peeled and chopped apples
- 3 eggs
- 1 pinch of salt
- 1 lemon (juice of and finely grated rind)

Made this last night and ate it this afternoon. I followed the recipe but used butter instead of marg, raisins instead of sultanas, and added a half teaspoon each of nutmeg and cinnamon. Cake has a slight crumbly texture but this contrasted nicely with the moist apple. It went down very well with the people I served it to.
