Metric Cups
  • 25 digestive biscuits (about, to line an 8 inch pie dish)
  • mixed fruit cocktail
  • 200 grams cottage cheese
  • 200 grams cream
  • 2 tablespoons gelatine (heaped)
  • 25 graham crackers (about, to line an 8 inch pie dish)
  • mixed fruit cocktail
  • 7 ounces cottage cheese
  • 7 ounces cream
  • 2 tablespoons gelatine (heaped)

Method

  • Crush biscuits in a poly bag and line the pie dish (sprinkle a little fruit cocktail syrup on them while crushing for easy binding).
  • Empty fruit cocktail, cottage cheese, cream and softened gelatine into food processor and blend into a rough pulp.
  • Pour onto the biscuit lining.
  • Chill till set.
