Ingredients

Serves: 4

Metric Cups
  • 500 grams mushrooms (washed and chopped)
  • 4 cloves garlic
  • 200 grams creme fraiche
  • 2 red onions
  • 2 tablespoons vegetable oil
  • stock cubes (mushroom or vegetable - x 3 to make 3 pints)
  • 17⅔ ounces mushrooms (washed and chopped)

  • 2 tablespoons vegetable oil
  • broth cubes (mushroom or vegetable - x 3 to make 3 pints)

Method

  • Dice onion and chop garlic in vegetable oil to soften
  • Wash and add mushrooms chopped and sweat down for 10 mins
  • Prepare stock and add to pan, bring to boil and simmer for 15 mins.
  • Remove pan from heat and add creme freche. season with salt n pepper.
  • Blend soup and voila magic mushroom heaven! x

    • Just made this and it's absolutely divine! Might add a little less stock next time, say 200ml, to make it a little thicker. Scrumptious!!!
