Dad's Parsnip and Carrot Combo

Peel and grate parsnip and carrots. Coarsely grate the vegetables (I use the coarse side of a box grater). Put in a pot the grated vegetables, water and butter add salt if using. Cook on medium heat for about 5 or 6 minutes until the carrots and parsnip are cooked through and most of the water has evaporated. Taste for seasoning and add salt and pepper to your preference.

Introduction
This is a lovely naturally sweet way of eating carrots and parsnips. I enjoyed this as a child and still do. Goes well with simple grilled or roasted meats.
