This is a lovely naturally sweet way of eating carrots and parsnips. I enjoyed this as a child and still do. Goes well with simple grilled or roasted meats.

Ingredients

Serves: 6

Metric Cups
  • 1 parsnip
  • 3 carrots
  • 4 tablespoons water
  • 1 tablespoon butter
  • adobo seasoning (to taste)

Method

Dad's Parsnip and Carrot Combo is a community recipe submitted by Coby and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Peel and grate parsnip and carrots.
  • Coarsely grate the vegetables (I use the coarse side of a box grater). Put in a pot the grated vegetables, water and butter add salt if using.
  • Cook on medium heat for about 5 or 6 minutes until the carrots and parsnip are cooked through and most of the water has evaporated.
  • Taste for seasoning and add salt and pepper to your preference.
