Donna Hay's Easy Mac and Cheese

Cook two cups of macaroni for six minutes or until cooked to your liking. Drain and return to saucepan, then add 1/2 a cup (4 floz) cream, 3/4 cup (6fl oz) of milk and 3/4 cup of grated cheddar cheese to the pan with the macaroni and stir over low heat until the cheese melts and the mixture is thick. I usually add some parmesan too:)

I have cooked this many times, its a great luxury version, the cream, milk, and cheese soften and melt into a creamy sauce. It has a unique approach, and the cheese goes quite stringy and then somehow it all softens into a wonderful creamy sauce. I serve it fresh from the pot or sometimes tip into a dish an bake. We fold in and add what ever we have on hand, softened onion, garlic, ham, bacon, tomatoes, herbs, paprika or spinach - to tart it up. I found the recipe in a 25 year old Donna Hay cooking for kids book - but its decadent enough for grown ups.
