Savoury Impossible Pie

Introduction

Basically an easy Bacon and Egg Pie, but you can alter the filling ingredients to your taste. Sometimes I like this with capsicum or peas.

Ingredients

Serves: 2-4

  • ⅓ cup all-purpose flour
  • 1½ cups milk
  • 3 eggs
  • 2 rashers chopped bacon
  • 3 chopped scallions
  • 1 cup grated Cheddar cheese
  • 5 ounces canned sweetcorn kernels (rinsed and drained)
  • 2 tablespoons chopped fresh parsley

  • Fry bacon until browned, place bacon into a sieve and allow to drain
  • Oil a shallow 23cm round flan dish.
  • Whisk flour and milk in medium bowl until smooth; whisk in eggs.
  • Stir in remaining ingredients; pour mixture into prepared dish.
  • Bake in moderately slow oven (160-170 C) about 1 hour or until set.
