Fry bacon until browned, place bacon into a sieve and allow to drain Oil a shallow 23cm round flan dish. Whisk flour and milk in medium bowl until smooth; whisk in eggs. Stir in remaining ingredients; pour mixture into prepared dish. Bake in moderately slow oven (160-170 C) about 1 hour or until set.
Introduction
Basically an easy Bacon and Egg Pie, but you can alter the filling ingredients to your taste. Sometimes I like this with capsicum or peas.

Serves: 2-4
- ⅓ cup all-purpose flour
- 1½ cups milk
- 3 eggs
- 2 rashers chopped bacon
- 3 chopped scallions
- 1 cup grated Cheddar cheese
- 5 ounces canned sweetcorn kernels (rinsed and drained)
- 2 tablespoons chopped fresh parsley
