Garbanzo (Chick Pea) Cake

Preheat oven to 180C Rub chickpeas between the palms of your hands to remove skins. Put in food processor and process until smooth. Spoon blended chickpeas into large mixing bowl, stir in eggs, sugar, cinnamon, baking powder, orange rind and juice. Pour mixture into greased and lined 1Lb. loaf tin. Bake in oven for 1-1.5 hrs. or until skewer comes out clean. Remove cake from oven. Leave to stand for 10 minutes. Remove from tin. Sprinkle with cinnamon-sugar. Allow to cool completely before serving.
