Put the 3 fruits, butter, sugar, carb soda and water in a large pan bring to boil and boil about 5 minutes stirring to dissolve sugar. watch to see it does not froth over the top of the pan. Set aside to cool. Add the spices and eggs folding gently. Then fold in the flour bit by bit until well blended. It is quite a fluid mix. Perhaps this is the secret of the lightness. Grease and paper the tin with baking paper. Cook about 90 minutes at 170C, or until a skewer tests clean. Enjoy.

- 2 cups golden raisins
- 2 cups raisins
- 1 cup Zante currants
- 12 ounces butter
- 2 cups brown sugar
- 2 teaspoons baking soda
- 2 cups water
- 2 teaspoons nutmeg
- 2 teaspoons cinnamon
- 1 dash ground cloves
- 4 well beaten eggs
- 2 cups plain whole wheat flour
