Knead the 300 gr flour, water, sugar, eggs, 15 gr. butter. Cover with the 200 gr flour and let it rest for 15 min. (30 min. if possible) Knead again and add the 200 gr. butter and the salt. When kneaded thoroughly, add the pearl sugar. Divide the dough in parts of approx. 100 gr. Let it rise for half an hour under a kitchen towel. Heat the waffle-iron on a medium-high heat and bake.
