Fiery Tomato Soup

Heat the oil over med-high heat, add the onion and celery. Saute just until browning on the edges, about 2 minutes. Add the garlic, stir for a moment, then add the chilies, tomatoes, corn, water, sugar, and good grinding of black pepper. Turn up the heat and let it bubble while you make a quesadilla or something else to accompany the soup. Stir occasionally to prevent burning. After about 5 minutes it should have reduced to a more soupy consistency - add cilantro, taste it, and adjust flavorings. Ever so nice with a lager....
Introduction
Fiery because it's spicy and fast - 10 minutes at dinner tonight. And I love the sweetness of the corn as a counterpoint to the heat.

- ½ medium onion (diced small)
- 1 stick celery
- 1 clove minced garlic
- 17 ounces crushed tomatoes
- 4 ounces green chiles (canned)
- 1 cup frozen sweetcorn kernels
- 1 cup water
- 1 pinch of sugar
- minced black pepper
- sour cream (to taste)
- 1 splash of vegetable oil
- cilantro
