Dice the onion, garlic, and celery and add to a large pot with the olive oil. Heat together for a few minutes until soft and fragrant. Add the beef broth, sliced carrot, and bay leaves and simmer for about an hour. Cut sausage into small bite-sized pieces and add to the pot with the lentils. Simmer for another 20 to 30 minutes until hot.
Introduction
I needed to find a way to use leftover Italian Sausages with Lentils, and this was the result. My family really looks forward to this.

- 2 cups lentils
- 1 Italian sausages
- 1 small onion
- 1 clove garlic
- 1 stick celery
- 1 tablespoon olive oil
- 6 cups beef broth
- 2 carrots
- 3 bay leaves
