Super Fast Post-Gym Stir Fry

Do all preparation in advance. The wok needs to be hot and the ingredients need to keep moving. No time for stopping here. Boil the kettle and put the noodles on - if using brown rice udon, they'll take about the same time to cook as the stir fry so put them on just before putting the chicken into the pan. Add the oil to the wok on a high heat When hot and ready to sizzle add the chicken breasts and stir for about 5-8 minutes until the chicken is more or less cooked. Add the grated garlic and ginger and stir to coat the chicken (it is vital to keep things moving once the garlic and ginger goes in so they don't burn) Add the carrots pretty much immediately After about 1-2 minutes add the onion After about 1-2 minutes add the peppers About 2 minutes later drain the noodles and add them to the pan Add the sweet chilli sauce, soy sauce and lime juice Give everything a good toss and taste to see if you want a little extra sweet chilli or soy. Eat while it's fresh and hot.
Introduction
This is a super quick, crunchy stir fry that I knock up within a minutes of getting home from the gym. If I was really organised, I'd get the vegetable chopping done before I went, but I'm not.

Serves: 2 hungry people
- 1 tablespoon groundnut oil (or other vegetable oil)
- 2 chicken breasts (chopped, optional - I've made this with just vegetables)
- 2 cloves garlic
- fresh ginger (thumb-sized piece)
- 1 red onion (sliced into half moons)
- 2 carrots (cut into batons)
- 2 red peppers (or yellow or orange, cut into strips)
- 1 tablespoon sweet chilli sauce (or more if you like it)
- 1 lime (juice of)
- 1 handful fresh coriander
- noodles (I love brown rice udon noodles)
