Toss the chicken in lemon juice and the spices (except the garam). Heat the oil in a large pan and fry the onion and chilli until soft. Add the chicken and brown. Stir in the coconut milk and creamed coconut and simmer for 20 minutes, uncovered. Stir in the Garam Masala and season to taste. Add coriander just before serving.

- 1 pinch of salt (to taste)
- 1 handful fresh coriander (chopped to serve)

Lovely recipe but had to add a teaspoon of flour to thicken things up a bit. And (sub ed) what happened to the garlic, it's in the ingredients but disappears from the method...
