A little like a korma but with a bit more fire

Ingredients

Serves: 2-4

Metric Cups
  • 450 grams chicken breasts (boneless, skinless - diced)
  • 1 lemon juice (or lime)
  • 2 cloves garlic
  • 1 chilli
  • ½ teaspoon ground ginger
  • ½ teaspoon turmeric
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cumin
  • 2 tablespoons oil
  • 1 medium onion (sliced)
  • 1 can coconut milk
  • 50 grams coconut cream (crumbled)
  • ½ teaspoon garam masala
  • 1 pinch of salt (to taste)
  • 1 handful fresh coriander (chopped to serve)
  • 15⅞ ounces chicken breasts (boneless, skinless - diced)
  • 1 lemon juice (or lime)

  • 1 chile
  • ½ teaspoon ground ginger
  • ½ teaspoon turmeric
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cumin

  • 1 can coconut milk
  • 1¾ ounces coconut cream (crumbled)
  • ½ teaspoon garam masala
  • 1 pinch of salt (to taste)
  • 1 handful cilantro (chopped to serve)

Method

Chicken and Coconut Curry is a community recipe submitted by dave clarke and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Toss the chicken in lemon juice and the spices (except the garam).
  • Heat the oil in a large pan and fry the onion and chilli until soft. Add the chicken and brown.
  • Stir in the coconut milk and creamed coconut and simmer for 20 minutes, uncovered. Stir in the Garam Masala and season to taste.
  • Add coriander just before serving.

    • Lovely recipe but had to add a teaspoon of flour to thicken things up a bit. And (sub ed) what happened to the garlic, it's in the ingredients but disappears from the method...
