Garlic and Herb Chicken Escallopes

Chop garlic and add with herbs to breadcrumbs place on a plate. Beat egg place in a bowl. Take a chicken breast and dip into egg, then place chicken breast into breadcrumbs to coat evenly. Repeat with all breasts. Heat oil in pan to shallow fry. When hot, add chicken breasts and fry until golden on both sides. Pre heat oven to 200 degrees, place chicken on a grill tray so oil can drip out while cooking. Cook in oven for 20 mins or until chicken inside is completely white and piping hot. serve immediately with potato wedges, chips or roasts and a salad.
