Ingredients

Serves: 2 people

Metric Cups
  • 500 millilitres plain yoghurt
  • 120 grams icing sugar
  • 2 teaspoons cardamom seeds (powdered)
  • 17½ fluid ounces plain yogurt
  • 4 ounces confectioners' sugar
  • 2 teaspoons cardamom seeds (powdered)

Method

  • Tie the yoghurt in some muslin cloth and hang from a tap in the sink for about 2 hours to let the water drain out.
  • Mix the sugar and cardamom.
  • Put the curd in a bowl and whip well to leave no lumps and make it smooth and creamy.
  • Add the sugar mix and mix well.
  • Pour into your serving bowls/glasses, sprinkle a little of the sugar mix and chill.

    Instead of the cardamom, you can flavour with some pureed mango or strawberry. Just reduce the quantity of sugar by half.
