Ingredients

Metric Cups

For the Spinach Gnocchi

  • 1½ kilograms spinach
  • 200 grams Parmesan cheese (grated)
  • 150 grams flour
  • 250 grams ricotta cheese
  • 2 eggs (beaten)
  • salt
  • pepper

For the Sauce

  • ½ litre cream
  • 150 grams gorgonzola cheese

For the Spinach Gnocchi

  • 3⅓ pounds spinach
  • 7 ounces Parmesan cheese (grated)
  • 5⅓ ounces flour
  • 8⅚ ounces ricotta cheese
  • 2 eggs (beaten)
  • salt
  • pepper

For the Sauce

  • ⅞ pint cream
  • 5⅓ ounces gorgonzola cheese

Method

Spinach Gnocchi With Gorgonzola Sauce is a community recipe submitted by domesticgoddess and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Puree the cooked spinach.
  • mix 100g parmesan, half the flour, ricotta, beaten eggs, salt and pepper. with the help of a spoon, shape the gnocchi. Toss in the remaining flour and cook in a pan of boiling water. Leave to cook for 3 mins; when they rise to the surface remove with a slotted spoon and place in an ovenproof dish greased with butter.
  • Sprinkle over the remainder of the parmesan and the following sauce: melt in a bain-marie the mashed gorgonzola together with the cream.
  • Pour this over the gnocchi and bake in the oven for 20 minutes.
