Ingredients

Serves: 25

Metric Cups
  • 50 grams dried apricots (finely chopped)
  • 40 grams dates (seeded, finely chopped)
  • 85 grams raisins (finely chopped)
  • 2 teaspoons glace cherries (finely chopped)
  • 2 tablespoons boiling water
  • 50 grams skimmed milk powder
  • 45 grams desiccated coconut
  • 1 teaspoon vanilla essence
  • 45 grams desiccated coconut (extra)
  • 1¾ ounces dried apricots (finely chopped)
  • 1⅖ ounces dates (seeded, finely chopped)
  • 3 ounces raisins (finely chopped)
  • 2 teaspoons candied cherries (finely chopped)
  • 2 tablespoons boiling water
  • 1¾ ounces skimmed milk powder
  • 1⅗ ounces unsweetened shredded coconut
  • 1 teaspoon vanilla essence
  • 1⅗ ounces unsweetened shredded coconut (extra)

Method

  • Combine apricots, dates, raisins and cherries in a medium bowl.
  • Pour the water into the bowl, mix well; stand 10 minutes.
  • Stir in milk powder, coconut and vanilla.
  • Roll rounded teaspoons of mixture into balls; dip into extra coconut.
  • Refrigerate until firm.
  • Combine apricots, dates, raisins and cherries in a medium bowl.
